This is an easy way to pimp your bread! The pesto recipe I used is just a suggestions. You may use any pesto you like – store bought or self made. Try using red pesto with dried tomatoes – makes for a great starter to any Italien meal.
Not that making bread is ever a short task – but

  • 10g fresh yeast
  • 125ml water [lukewarm]
  • 250g flour
  • ½ teaspoon salt
  • 3+1 tablespoons olive oil

_ mix yeast with water
_ combine flour and salt in a bowl
_ add dissolved yeast and 3 tablespoons olive oil to the flour
_ knead until you get a smooth dough
_ cover and let rise about 45 minutes [in a warm place]

  • 1 handful basil
  • 40g peeled almonds
  • 2 cloves garlic
  • about 120ml olive oil
  • 2 tablespoons freshly grated hard cheese [parmesan]
  • salt
  • pepper
  • lemon juice

_ for the pesto wash the basil, shake dry and pluck off the leaves
_ fry the almonds in a hot pan [without oil]
_ peel garlic
_ combine basil, almonds and garlic in a blender
_ slowly add the olive oil and blend until you get a smooth paste
_ mix in the cheese
_ season with salt, pepper and lemon juice
_ knead the dough and roll it out into a rectangle
_ spread the pesto on top  [leave a 1cm edge]

_ roll it up and seal the ends well
_ carefully shape it into a loaf
_ place on a baking sheet with parchment paper
_ leave it 15 minutes to rest
_ preheat oven to 220 ° C
_ brush with remaining olive oil
_ bake for 25-30 minutes [until golden brown]
