If you are looking for a taste of Africa – or just a thousand calories per soupspoon – this is the right recipe. Seriously, this is not exactly the right soup to start a diet but it tastes amazing. And you better like peanuts – a lot :D


  • 1 cup rice
  • 700ml vegetable broth
  • half red onion
  • 1 small carrot
  • half small courgette
  • small handful peanuts
  • 3 tablespoons tomato paste
  • 2-4 teaspoons peanut butter
  • 1 clove garlic
  • hot sauce
  • 0.5 cm ginger [half teaspoon ginger powder]


_ bring vegetable broth to a boil

_ meanwhile cut onion and garlic into small and carrot and courgette into medium chunks

_ add first garlic and ginger, then peanuts, tomato paste and peanut butter to the broth

_ simmer until courgette and carrots are getting soft

_ season with salt [if needed – usually it doesn’t need more then the salt from the vegetable broth]

_ serve in a bowl with rice

_ sprinkle with chopped peanuts
