Christmas dinner in the US. This just calls for cranberry sauce. In Austria you might even have a hard time getting cranberries – here even the gas station will offer some. My sister in law was nice enough to share her family recipe with us. An orange-cranberry sauce and an apple-cranberry sauce [my dad is allergic to oranges] – personally I like the apple version even better. Both look pretty much the same. Best of all – no need to cook anything. Just throw all ingredients together in a blender
You can – and should make this up to two days in advance. The acid of the orange/apple is going to break down the bitter flavors from the cranberries. The sauce will get more creamy and a deeper red with time.
CRANBERRY SAUCE WITH ORANGE
_ place all ingredients into a food processor [or into a bowl and use a hand blender]
_ blend until all cranberries are chopped up [but don’t blend until you end up with a fruit cream]
_ add more sugar if you like it sweeter
_ add cranberries if too liquid
_ stir every couple of hours

_ core apples and cut into large chunks
_ roughly chop ginger
_ place all ingredients into a food processor [or into a bowl and use a hand blender]
_ blend until all cranberries are chopped up [but don’t blend until you end up with a fruit cream]
_ add more sugar if you like it sweeter
_ add cranberries if too liquid
_ stir every couple of hours
