This might not look like a birthday cake – but it is – or rather birthday tarts. My mother loves apples – and the more nuts the better! So I think this recipe was a real success! It really has a nice balance between the nutty marzipan cake and the soft, slightly sour apple. I prefer it warm – right out of the oven – but cold is nice too!


  • 4 apple [slightly sour]
  • 1 lemon [juice]
  • 4 eggs
  • 100g marzipan
  • 60g powdered sugar
  • 1 package vanilla sugar
  • pinch salt
  • 60g flour [fine]
  • ½ package baking powder
  • 100g ground almonds
  • 100g walnuts [roughly chopped]
  • 120g lingonberries [fresh or preserved, jam is ok]


_ wash and peel the apples

_ remove core

_ cut 1cm deep slices all around

_ rub with lemon juice


_ preheat oven to 180°C

_ butter four oven proof dishes

_ whisk together eggs, marzipan, powdered sugar, vanilla sugar and salt [until fluffy and marzipan is well incorporated]

_ mix in flour, baking powder, almonds and walnuts

_ finally fold in half of the lingonberries


_ spoon dough into the oven proof dishes

_ slightly push one apple into each dish

_ top off with remaining lingonberries


_ bake for 30 to 40 minutes

_ you can enjoy this cold or while still warm
