MANGO – MINT – LIME GRANITA

This granita makes for a fancy – low effort dessert. Easy and quick to prepare beforehand. If you can get your hands on some ripe and juicy mango that’s perfect – otherwise canned mango pulp or mango juice is fine too. Either way – taste before adding sugar – you might not need the full quarter cup. If you get a really ripe one you might not need any sugar.

MANGO – MINT – LIME GRANITA

  • 1 large mango [or 500ml mango juice/ 500ml mango pulp]
  • 0.25 cups sugar
  • 0.25 cups fresh mint leaves
  • 2 limes [juice]

_ place mango in a large saucepan over medium heat

_ mash with a fork

_ add sugar as needed and stir until dissolved

_ remove from heat and cool slightly

_ add mint leaves and lime juice

_ pour into a shallow baking tray and cool to room temperature

_ transfer tray to the freezer [min. 4-6 hours]

_ if possible scrape out with a fork – otherwise chop into blocks and puree with a hand blender

_ enjoy immediately
