If you are looking for a less sweet version of lingonberry jam – honey is the way to go. The sauce won’t last quite as long as the jam but if you seal it in glasses it should be good for a while.
It has a few more bitter notes than the jam but can be used the same way. Enjoy your hearty autumn dishes!
_ sort through the lingonberries [remove leaves and stems as well as rotten or dry berries]
_ place berries in a large pot and add water
_ simmer for about 10 to 15 minutes [stir often]
_ remove from heat and add vanilla and honey [the vanilla will help with the bitterness]
_ stir, taste and add honey until you are happy with the sweetness
_ spoon into sterilized jars and close immediately
