Turmeric is not only great to give some color and spice to your rice – but also to dye fabrics. Usually you only find that out when you accidentally mess up your kitchen towels. So last week I went for intentional fabric coloring. It was easier than I expected and the color turned out great – vibrant and a beautiful yellow.  So did my fingers :D

Lemon rice makes for a great side dish. I usually make it for a main course. Super quick to make and the rice reheats nicely in the microwave. Perfect lunch to take to work. It’s exotic and refreshing with a sweet hint from the raisins.

  • 200g basmati rice [or jasmine]
  • 500ml water
  • 5 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 7 curry leaves
  • green chilies
  • 1 teaspoon salt
  • 0.5 teaspoons turmeric
  • 2 tablespoons peanuts
  • 2 lemons
  • raisins

_ wash rice until water runs clear

_ add water and bring to a boil

_ reduce heat and simmer for about 12 minutes

_ in a large pan heat oil and add mustard seeds

_ when they start to splutter add peanuts [fry until golden brown – this goes super quick]

_ add turmeric powder, curry leaves, salt and chilies [you need to judge the amount of chilies yourself – depending on what kind of chilies you get and how spicy you like it]

_ fry for a minute

_ remove rice from the heat

_ gently fork through it

_ stir rice into the spice mix

_ squeeze in the lemon juice

_ mix through until rice is beautifully bright yellow

_ serve toped with raisins
