LEMON POSSET WITH BLACKBERRIES

Mixing cream and lemon goes a bit against nature of things. The resulting taste is something you have to like. But overall it’s very refreshing and fruity. 

LEMON POSSET WITH BLACKBERRIES

  • 500ml heavy cream
  • 1 tablespoon honey
  • zest of 1 lemon [large strips]
  • 0.3 cup freshly squeezed lemon juice [approx. 1-2 lemons]
  • whipped cream
  • 2 cups blackberries
  • 1 tablespoon honey


_ bring cream and honey to a boil [over medium heat]

_ boil for 3-5min [stir regularly – burns and boils over quickly]

_ remove from heat

_ stir in lemon zest strips and lemon juice

_ cover and allow to steep for 20min

_ remove lemon zest and divide into serving dishes

_ cover and refrigerate overnight

_ cook down to get a runny syrup consistency [approx. 15min]

_ allow syrup to cool

_ pour thin layer of syrup over each posset

_ decorate with whipped cram and blackberries
