LEMON GRANITA

Souuuuuur – but so delicious! Perfect to make a little in advance. Once you need it – ready in 5 minutes! This super refreshing granita reboots you on a hot summer day.

LEMON GRANITA

  • 500ml water
  • 160g sugar
  • 250ml lemon juice
  • zest from 2 lemons

_ heat water and sugar in a pot

_ once sugar is dissolved bring to a boil

_ take off the stove and let cool down

_ add lemon juice and zest to the syrup

_ pour into a freezer proof container

_ freeze lemon syrup [for at least 4hours]

_ run warm water over the container

_ place ice block onto a cutting board

_ chop into large chunks

_ blend frozen lemon syrup until you get creamy ice crystals

Once you blend the granita it won’t stay cold for long. Ten minutes is you will have a soupy mess. So serve and enjoy immediately.
