Whenever we would go on a bus trip in Vietnam or Cambodia we would buy pomelo slices as a snack. Great thing here – they sell them already fully skinned! At home in Europe it takes me more than half an hour to fully peel my honey pomelo – and they are never as sweet as in Asia – but still worth the expense. And now for the best part – each batch of pomelo slices comes with a small bag of chili salt! One of the greatest flavor combinations ever! Visiting Asia you will also come across this as a popular dessert. As a last course or complimentary to the bill you will get pomelo with chili-salt in most restaurants. The dip is usually quite spicy – but you can reduce on the chili if you prefer your tong not being on fire.
HONEY POMELO WITH CHILI-SALT DIP
_ combine salt and chili in a mortar [1 chili : 2 salt]
_ crush until salt and chili form a well blended powder
_ dip pomelo slices in chili-salt and enjoy
