TIROLER GRÖSTL
1 onion
800 g potatoes
250 g bacon [cubed]
2 tablespoons lard [or oil]
salt
pepper
½ teaspoon caraway seeds
4 eggs
2 tablespoons parsley
_ peel potatoes and cook until almost tender
_ finely chop onion
_ cut potatoes into thin slices [about 5mm thick]
_ heat lard and fry potatoes until golden [about 5 minutes]
_ add bacon and onion [fry for another 5 minutes]
_ meanwhile fry the eggs in a hot pan with a little oil
_ season potatoes with salt, pepper and caraway
_ mince parsley
_ serve potatoes in four little pans
_ sprinkle with parsley and top off with a fried egg

2 Esslöffel Petersilie
