PAPAYA MANGO SALAD
400 g                     green papaya
100 g                     firm mango
1 medium            carrot
2                              shallots
2-3 red                  bird eye’s chillies
3-4 tablespoons fish sauce
4-5 tablespoons lime juice
20 g                        dried shrimps 
40 g                        peanuts
3-4 tablespoons palm sugar
handful                 coriander
_ peel green papaya, cut in half and remove seeds
_ peel mango and carrot
_ shred papaya, mango and carrot with a zigzag peeler into thin strips
_ soak all strips in ice cold water to make them crispy
_ lightly crush the chilies
_ finely slice the shallots
_ roast peanuts in a pan without oil and lightly crush in a mortar
_ combine fish sauce, lime juice, peanuts, shallots, chili and palm sugar [mix well]
_ drain sliced fruit and veggies and marrinate with fish sauce mixture 
_ garnish with coriander
[if you find dried shrimp too potent you can use a lrge hand full og cooked shrimp]

4-5 Esslöffel    Limettensaft
20 g                    getrocknete Garnelen 
40 g                    Erdnüsse
3-4 Esslöffel    Palmzucker
handvoll            Koriander
