MARSHMALLOW GHOSTS
2 egg white
1/8 cup corn / rice syrup
1/4 cup sugar
1/8 cup water
1/2 tablespoon gelatine powder
pinch vanilla
corn starch [for dusting]
chocolate [for decorating]
_ prepare a baking tray or silicone mat by dusting it generously with corn starch
_ dissolve gelatine in 1 tablespoon water
_ beat egg white until stiff peaks form
_ combine corn syrup, sugar, vanilla and water in a saucepan
_ slowly heat mixture until it starts to thicken and bubble slowly
_ stir in the gelatine and stir well
_ slowly pour sugar mixture into the egg whites
_ continue beating until peaks start to form
[mixture should be thick and glossy but don’t mix this too long - piping them is time sensitive and you don’t want the mixture to harden in your piping bag]
_ spoon mixture into a piping bag with a round tip
_ pipe little ghost shapes onto your prepared surface
_ generously dust with more corn starch [make sure to cover your ghosts from all sides]
_ leave to firm up for about an hour
_ remove ghosts from corn starch and use a soft brush to remove excess starch
_ use a toothpick to draw small faces with molten chocolate onto the ghosts
_ leave out to dry a little further for about one day
[after that store in an air tight box]
