LEMON BUTTER
250 g butter [room temperature]
1 lemon [juice & zest]
salt
_ cream butter with a fork
_ finely grate lemon zest and juice lemon
_ add zest and juice to the butter
[this takes a little bit of patience to incorporate the juice into the butter]
_ season generously with salt [to taste]
_ spread onto a plate and eat immediately, form a block and cool or spoon into ice cube trays and freeze for later
