ELDERFLOWER LIQUEUR
20 large elderflower heads
4 cups Korn
[or some other taste- and odorless hard liquor]
1 large lemon [zest]
½ cup sugar
[best pick elderflowers on a sunny day after at least two days without rain]
_ discard brown flowers [and give critters the chance to flee]
_ remove thick stalks
_ place in a sterilized jar, top with the lemon zest and pour the alcohol in until it completely covers the flowers
[ideally this fills the jar completely- leaving little to no space for air inside]
_ place in a cool, dark place for two to four weeks
_ gently heat sugar and water [stir until the sugar has dissolved]
[leave to cool before using]
_ strain the liquor through a muslin cloth
_ stir in half the sugar syrup
[taste for sweetness and add more syrup if required]
_ pour into sterilised bottles and leave for for two months in a cool dark place to mature
[you can drink it right away but it will be better two months in]
