NO-COOK CRANBERRY SAUCE 2 WAY - ORANGE & APPLE-GINGER
Orange-Cranberry:
12 oz cranberries
2 oranges [juice]
½ orange [zest]
¼ cup sugar
Apple-Ginger-Cranberry:
12 oz cranberries
2 apples [sweet and firm]
1 teaspoon ginger
¼ cup sugar
1 ½ cups apple cider [apple juice]
You can make this up to two days in advance. The acid of the orange/apple is going to break down the bitter flavors. The sauce will get more creamy and red with time.
_ place all ingredients into a food processor [or into a bowl and use a hand blender]
[for the apple version core the apple and skin the ginger]
_ blend until all cranberries are chopped up
[but don’t blend until you end up with a fruit cream]
_ add more sugar if you like it sweeter
_ add cranberries if too liquid
_ stir every couple of hours
