CORNEL CHERRY OLIVES
cornel cherries [firm, just slightly turning red]
salt
water
extra virgin olive oil
optional:
oregano
thyme
rosemary
garlic
_ collect and wash fruit [you want the fully grown fruit, but not yet turned red, soft and sweet]
_ fill into sterile jars
_ dissolve salt in water [350 g salt to 1 l of water] and pour salt water over the fruit [they should be well covered with water]
_ leave to stand in closed jars for approx. 2 weeks until the fruit sinks to the ground
_ strain the cherries, rinse and fill into clean jars
_ add fresh herbs and garlic cloves [optional]
_ top up with olive oil and leave to infuse for a further two weeks
