BLACK BERRY ELDERBERRY JAM

600 g black berries
400 g elder berries
pinch cardamon
1 stick cinnamon
500 g canning sugar [1:2]

_ pluck elderberries from the stems [easies if you use a fork]
_ remove green or rotten fruit
_ combine berries in a large pot
_ use a hand blender to puree the berries
[no need to make this too creamy]
_ mix in canning sugar
_ add cardamom and cinnamon
_ heat slowly [stir regularly]
_ bring to a roaring boil [for min 3 minutes]
_ spoon a little bit onto a cold plate and test if it turns into jelly
[keep on boiling until it does]
_ remove cinnamon stick
_ spoon into sterilised jars and close them immediately


BROMBEER HOLLER MARMELADE

600 g Brombeeren
400 g Hollerbeeren
Priese Kardamom
1 Stange Zimt
500 g Gelierzucker [1:2]

_ Hollerbeeren von den Stielen befreien
[am einfachsten mit einer Gabel]
_ grüne und verdorbene Beeren entfernen
_ Beeren in einen großen Topf geben und fein pürieren
_ Gelierzucker, Kardamom und Zimt unterrühren
_ unter ständigem Rühren erhitzen
_ 3 Minuten sprudelnd kochen [Gelierprobe machen]
_ Zimtstange entfernen, in sterile Gläser füllen und sofort verschließen
