APPLE MARSHMALLOWS
600 g apples [weight with peel and core removed]
100 ml water
40 g powdered gelatin
1-2 tablespoons honey [optional]
½ teaspoon vanilla
_ peel and core apples
_ slice and place in a large pot with the water
_ bring to a boil and simmer until completely soft [about 15 minutes]
_ let cool slightly and blend with an immersion blender [as smooth as possible]
_ transfer to a large bowl and stir in vanilla and honey [only use honey if your apples are quite tart]
_ sprinkle gelatine on top and leave to bloom for 5 minutes
_ line a tray [that fits into your fridge] with a baking sheet
_ whip on medium to high speed for 20 min with an electric mixer
[if the gelatine stays in little blobs then the apples were already too cold. simply transfer to a pot, gently heat while stirring with a whisk and transfer back to your bowl once all lumps are gone]
_ once mixture is super fluffy pour into your baking sheet lined tray
_ refrigerate for 2 hours
_ take out of the tray and cut into desired shapes
[you can dust it with corn starch - but it’s not a must]
[store in the fridge]
