GRILLED STRAWBERRY THYME JAM

Strawberry jam? Boring! Try this grilled strawberry thyme jam. It’s made in the oven and tastes very special. I made it with little sugar because I like it with more fruit flavor and less sweet. If you want to preserve it longer add more sugar or some jam preservative. 

GRILLED STRAWBERRY THYME JAM

  • 3.5 cups ripe fresh strawberries
  • 0.75 cups sugar
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons fresh thyme leaves

_ cut strawberries into small cubes

_ put them into an oven proof glass dish

_ mix with sugar, lemon juice and thyme

_ put into the oven at 180°C [will get really liquid first – then start to reduce and thicken]

_ watch closely and stir occasionally [tends to boil over]

_ the jam is ready if you run a wooden spoon down the middle of the dish and the mixture stays separated without running back together immediately

_ spoon into sterilized jars

_ let cool at room temperature

[easiest way to sterilize jars is to pick a jar without metal parts – fill up to 3/4 with water – put into microwave for 6min]
