GINGER APPLES WITH LEMON CREAM

Yummy ginger-apple mouse with a refreshing lemony cream. With very little effort to make this dessert keeps well in the fridge for a day or two.

GINGER APPLES WITH LEMON CREAM

  • 0.75 kg apples
  • 0.25 cups sugar
  • 0.3 cups water
  • 1 teaspoon ginger [freshly grated]
  • 0.5 cups heavy cream
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 0.5 teaspoons vanilla
  • 1 tablespoon sugar
  • dark chocolate

_ peel and dice apples

_ combine apples, water, sugar and ginger in a pot

_ bring to a boil and simmer for 10 minutes

_ remove from heat and set aside to cool

_ smash the softened apples

_ for the lemon cream stir together cream, sugar, vanilla, lemon zest and juice

_ mix well and set aside in the fridge [for 30 minutes]

_ whip cream

_ serve apple mouse in glasses and top with cream

_ sprinkle with dark chocolate
