After a very long autumn it looked like we would skip winter altogether and head straight for spring. I even bought daffodils. They are in full bloom now on my windowsill. That makes for a pretty weird picture since we got 10 cm of powder snow last night.
We started the day with a long walk, enjoying the snow flakes melting on our face. Now, what better way to warm my frozen fingers than to hug a steaming mug of stew…


  • 700g potatoes
  • 2 carrots
  • 1 onion
  • ½ liter vegetable stock
  • salt
  • pepper
  • 2 tablespoons oil
  • parsley
  • Seitan sausages

_ peel and dice potatoes
_ dice onion and carrots
_ heat oil in a medium pan
_ sauté onion and carrots
_ add potatoes and stock

_ cover and simmer until potatoes are soft
_ puree soup [keep some potato and carrot pieces]
_ finely chop a big hand full of parsley
_ stir in parsley [add water if the stew got too thick]
_ season with salt and pepper
_ warm sausages on the side
_ serve stew topped with chopped sausages
