I’m a big fan of traditional medicine. There are so many herbs and spices around with fascinating properties that we seem to have forgotten. Fennel is one of those magic spices. Used as tee it’s great against stomach pains. Fennel also has great properties against colds, coughs and bronchitis. Unfortunately it tastes terrible. I almost prefer having stomach pains to drinking fennel tea.
Fortunately fennel syrup is really yummy and soothing to the throat. So help your recovery along with three teaspoons fennel syrup a day.
FENNEL [ANTI COLD] SYRUP
_ slightly crush the fennel seeds in a mortar
_ combine them with the sugar and water in a medium saucepan
_ bring to a boil [under constant stirring]
_ reduce heat and simmer for 10 minutes
_ remove from the heat and leave to infuse for about an hour [longer is fine too – the syrup will get darker]
_ strain through a fine sieve [through out the fennel seeds]
_ pour syrup back into a pot
_ simmer for 30 minutes
_ sterilize a glass bottle [or jar]
_ fill the hot syrup into the bottle
_ let cool to room temperature
[store in the fridge]
