To be honest this is just a fancy way of making mashed potatoes with fried eggs. But a nice one at that.
Personally I like to use rather small potatoes and place some quail eggs in the center. Makes for great finger food.
EGGS BAKED IN POTATO
_ preheat oven to 200°C
_ wash potatoes and cut them in half
_ place them in the oven [cut side up]
_ bake for 30 to 40 minutes
_ use a spoon to scrape out the inside of the potatoes [make sure not to pierce the potato skin]
_ place potato pulp in a little bowl, add butter and spices [season to taste] and mash together
_ fill potato skins with mashed potato
_ place on a baking sheet [make sure they stand straight]
_ form a little dip in the center of each potato
_ crack an egg inside each
_ bake for additional 10 minutes [until the egg is to your liking]
