Seems like summer is slowly coming to an end. The first drizzly, cold days make me think of pumpkin pies and Christmas. Yes, yes I know, this is still a few months out. But my summer holiday is over and I need something to look forward to.
Eggnog is the perfect treat if it’s wet and windy outside. But once I had a look at how eggnog is made it kind of lost all it’s appeal. This alternative is much more to my linking. Smooth, creamy, boozy and entirely without eggs.
_ combine cornstarch, sugar, cinnamon stick, nutmeg and milk in a saucepan
_ gently warm and whisk until all ingredients are well combine and lump free
_ cook on low until the cornstarch thickens [should be thick enough to gently cover the back of a spoon]
_ remove from heat and stir in cold cream and alcohol
_ discard of the cinnamon stick
_ chill for at least 2 hours
_ serve sprinkled with grated nutmeg and cinnamon powder
