EGG DROP SOUP

Yum – childhood memories in a steaming cup of soup. My mum used to make this on regular base. The soup is quick and easy to cook. Perfect for a quick winter lunch.

EGG DROP SOUP

  • 1 l chicken stock
  • 2 tablespoons cornstarch
  • 1 teaspoon ginger [ground]
  • pinch garlic powder
  • 2 large eggs
  • 2 egg whites
  • 0.5 teaspoons sesame oil
  • 1 green onion
  • 0.25 cups corn kernels
  • salt
  • pepper

_ chop green onion

_ whisk cornstarch, ginger and garlic powder in with the chicken stock [mix well to get rid of any lumps]

_ bring to a boil

_ whisk together eggs and egg whites

_ once the broth boils remove from heat

_ pour in the egg [small portions at the time] under constant stirring [with a whisk]

_ stir in sesame oil, green onions and corn

_ season with salt and pepper

_ serve topped with green onion
