DUCK BREASTS WITH CITRUS GLAZE

I always thought making duck is only for professional cooks. But making a decent duck yourself is actually not that hard. It takes a bit of tweaking to get it cooked through and still pink inside but even a little bit too done it will be delicious. 

 

DUCK BREASTS WITH CITRUS GLAZE

  • 50g light brown sugar
  • 1 orange [juice + zest]
  • 1 large lemon [juice + zest]
  • 1 lime [juice + zest]
  • 4 duck breasts [skin on]
  • 2tablespoons olive oil
  • salt+pepper

fox_citrusduck2_ dissolve sugar in just enough water to cover it

_ add all three citrus juices and some of their zest

_ bring to a boil

_ simmer until syrupy [about 10min]

_ remove from heat and keep warm

_ score the skin of the duck breasts with a sharp knife in a criss-cross pattern

_ rub with salt and pepper from both sides

_ heat the oil in a frying pan

_ place duck breasts skin down in the pan

_ cook for 5min from both sides [flesh should be just pink]

[if duck is to red inside – cover with aluminum foil and place in the oven for a couple of minutes]

_ slice duck breasts diagonally

_ place on warmed plates

_ glaze with citrus syrup
