I’m not sure I would call my current living situation ‘having no home’ or ‘having multiple temporary homes’. But the fact is all my cooking takes place in kitchens of beloved friends and family who let me use them in exchange for a meal :) All my own kitchen tools are stored in boxes in my parents cellar for over a year now. And the things I probably miss the most is my blender and juicer! I had a crazy few months during my studies when I turned almost every fruit and vegetable I could get my hands on into juice. With more time on my hands now I’m back to solid foods :) but still have my passion for smoothies and vegetable juices.

The recipe below makes for a great breakfast smoothie or a treat after a workout. You can make it a little in advance and store it in the fridge over night. If you don’t have the ‘hyper-mega-blenderPRO’ then soak the dates a few hours in water before throwing them in – your blender will thank you!

  • ¼ large apple
  • ½ banana
  • ¾ cup orange juice
  • ½ cup yoghurt
  • 5 to 10 dates
  • 4 ice cubes
  • pinch cinnamon
  • pinch vanilla

_ cut apple into medium chunks

_ place all ingredients [but the dates] into a blender

_ start blending and add one date at the time

_ blend until smooth
