DANDELION GRANITA
1 liter pitcher dandelion flower heads 
3 cups               water 
1 cup                 sugar 
2                         lemons [juice]
_ harvest large flower heads and pack them lightly into your pitcher  
_ cut off green and white parts [they are bitter]  
   [make sure you got rid of all spiders and bugs]  
_ dissolve sugar in water and bring to a boil
_ as soon as simple syrup starts to boil pour over the pedals  
_ let steep for 1 hour  
_ use fine mesh to strain the pedals out of the mixture  
_ stir in lemon juice  
_ pour syrup into a freezer proof container [not higher than 1.5 cm]  
_ freeze for at least 8 hours  
_ take the dandelion ice block out of the container  
_ roughly chop with a knife  
_ puree with a blender 
   [taste to see if it needs more lemon juice]  
_ enjoy immediately
