Looking for a weekend treat in the sun? A short visit to the back yard and a view ingredients will make a delicious breakfast surprise!
DANDELION FLOWER FRITTERS
_ fetch some nice open dandelions
_ rinse in cool water – allow to dry
_ combine egg, milk, flour and vanilla sugar [for a savory version use rosemary, oregano, thyme, parmesan… instead of vanilla]
_ mix until all lumps are gone
_ heat olive oil in a pan
_ dip flowers into the batter
_ drop into pan, flower side down
_ cut stalks close to the flower top
_ when fritters are lightly browned, flip them over
_ when lightly browned on both sides, remove from pan
_ serve drizzled with honey, jam, apple sauce or powdered sugar [for savory version dip in aioli, mustard or curry sauce…]
Alternatively you can cut off the green parts of the flower and sprinkle the yellow petals directly into the batter – just cook them like pancakes!
