I have to admit this is a rather weird recipe. Not everybody’s taste. Well, the taste is actually great – the texture takes a little getting used to. It’s fun to prepare with kids [the kid in this case was me ;)].
The large amount of dandelion flowers gives the cookies a honey-like flavour – and a little bit of a ‘hairy’ texture…


  • ½ cup oil [neutral flavour]
  • ½ cup honey [dandelion flower honey if you have]
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 cup dry oatmeal
  • 1 cup dandelion flowers
  • pinch salt

_ gather adequate amount of dandelion flower heads
[leave the flower heads open on a table somewhere outside for a few minutes to give little critters the chance to leave the crime scene]
_ hold flower pedals by the tip with your fingers and use a knife to cut across the green close the the base [this should release the yellow florets from their attachment – discard of all green parts]
_ shake yellow flowers into a bowl

_ preheat oven to 180°C [375°F]
_ whisk oil and honey until well blended
_ beat in eggs and vanilla
_ stir in first flour, then oatmeal and finally the flower pedals

_ place teaspoon sized batter drops onto baking paper [this is a little tricky with the flower pedals in the batter]

_ bake for 10 to 15 minutes [until golden in color]
