CRUNCHY PEANUT BUTTER – AMARANTH BALLS

Peanut butter!!! Have a look at my newest creation. I’ve been wanting to make some sweet peanut butter snacks for a while now. But all recipes I found were really heavy on the sugar and calorie side. Inspired by the many truffles I make lately I came up with this crunchy snack ball. Instead of Amaranth you can probably use any other puffed up grain. I chose it because I really like the taste and the micro popcorn gives a great texture. Puffed rice would work too – but then you will have a harder time forming [small] cohesive balls. 

 

CRUNCHY PEANUT BUTTER – AMARANTH BALLS

  • ½ cup runny peanut butter [or normal peanut butter with a little water]
  • ¼ cup powdered sugar
  • ¾ to 1 cup puffed amaranth
  • dark chocolate [minimum 60% cocoa content]

_ combine peanut butter and powdered sugar [use a sieve to add the sugar to avoid any lumps]

_ stir with a fork until you get a smooth paste

_ add the amaranth [I like it with as much amaranth as possible – but more Amaranth will make it harder to form balls]

_ use your hands to mix it evenly

_ form little balls [pressing them tightly between your palms]

_ freeze for 20 minutes

_ melt chocolate in a water bath

_ use two spoons to dip the peanut butter balls into the chocolate

_ place onto parchment paper for the chocolate to set

_ snack immediately or keep in an air tight container in the fridge [you may freeze them]
