I’m somehow picky when it comes to my crackers. Making them myself gives me the chance to play with the flavor until I really like it. Using a cookie cutter you can easily make crackers for special occasions.

  • 1 cup flour [+ some for work surface]
  • 1-2 tablespoons thyme [or other spice like rosemary…]
  • 1 teaspoon salt
  • ½ teaspoon sugar
  • 2 tablespoons cold butter
  • 0.5 cup heavy cream
  • egg withe
  • coarse sal
  • spice for garnishfox_cracker3

_ lets get your hand dirty!

_ mix flour, thyme, salt and sugar in a bowl [I like to add some chili flakes]

_ add butter – knead

_ add cream – knead until dough forms

_ briefly knead dough on a lightly floured surfacefox_cracker4

_ wrap in plastic and refrigerate for 30min

_ preheat oven to 190°C

_ on a lightly floured surface roll out dough [very thin]

_ cut pieces into shapes of your liking

_ transfer to a baking sheet

_ brush with egg white

_ sprinkle with salt and/or spices

_ bake until golden brown and crisp [about 15-20 min – but check once in a while]

_ well done!fox_cracker2
