I’m somehow picky when it comes to my crackers. Making them myself gives me the chance to play with the flavor until I really like it. Using a cookie cutter you can easily make crackers for special occasions.
_ lets get your hand dirty!
_ mix flour, thyme, salt and sugar in a bowl [I like to add some chili flakes]
_ add butter – knead
_ add cream – knead until dough forms
_ wrap in plastic and refrigerate for 30min
_ preheat oven to 190°C
_ on a lightly floured surface roll out dough [very thin]
_ cut pieces into shapes of your liking
_ transfer to a baking sheet
_ brush with egg white
_ sprinkle with salt and/or spices
_ bake until golden brown and crisp [about 15-20 min – but check once in a while]
