As much as I love this salad you better be serving it to a large crowd. Otherwise you will be eating it for the next couple of days. It’s just impossible to make a small portion of this. I like to add some extra cumin and cilantro because that’s what makes it so special. But not everybody is a big fan so start small. 


  • 1 can beans
  • 1 can corn
  • 1 bell pepper [chopped]
  • ½ red onion [finely chopped]
  • 3 small tomatoes [chopped]
  • 1 jalapeño [minced]
  • 1 handful cilantro [chopped]
  • 2 limes [juice]
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 0.5 teaspoons salt
  • 0.5 teaspoons pepper

_ combine all ingredients in a large bowl

_ stir gently

_ let sit for 30min

_ taste and season with cumin, salt and pepper if needed
