Recently I have discovered that my body is not dealing too well with milk. But Indian chai latte is my personal comfort food – so what to do? Time for a chai latte update!
I found out that frothing up the coconut milk doesn’t work with all brands – actually I found only one where it really works. But than the selection is not too big here in Austria either. I admit that it looks really pretty with the foam on top – especially if you serve it to guests. But frothy or not – the tea will taste sweet, creamy and perfectly comforting.


  • 1 stick cinnamon
  • 1 star anise
  • 4 cloves
  • 2 pods cardamom
  • 2 teabags black tea
  • ¾ cup (180ml) unsweetened coconut milk
  • 2 cups (480ml) water
  • 1 tablespoon sugar

_ combine water with cinnamon, star anise, cloves and cardamom pods [crushed with the back of a knife] in a saucepan

_ bring to a boil

_ simmer for at least 5 minutes [the longer you simmer – the stronger the flavor of the spices]

_ remove from heat and add the tea bags

_ steep for 5 minutes

_ meanwhile heat coconut milk with sugar

_ simmer softly until sugar is dissolved

_ strain tea through a fine meshed sieve

_ pour into two mugs

_ froth [or whisk] coconut milk until frothy

_ pour milk on top of the tea

_ serve immediately
