Looking for a fresh after-workout snack or a light side salad? There is nothing more refreshing than cucumber with cilantro and a hint of jalapeño!
Done in no time – but tastes even better if you leave it to marinate for a few minutes.
If you made it in advance and kept it in the fridge – let the salad sit on the counter for a little while before serving – the olive oil solidifies slightly when it’s cold.
CILANTRO LIME CUCUMBER SALAD
_ seed and finely dice jalapeño
_ finely mince garlic
_ slice cucumber into very fine slices
_ combine jalapeño, garlic, lime juice, red pepper, salt, pepper and olive oil in a bowl
_ whisk until well combined
_ add cucumber to the dressing and stir to combine
_ finely mince the cilantro and add to the bowl
_ let it sit to marinate for at least 15 minutes before serving
