CILANTRO LIME COCONUT RICE

Why cook rice with plain old water? Use coconut milk! Just as easy to make and really does the trick. Takes rice from a side dish to a main component of any Asian dinner. Serve with any kind or grilled meat or seafood. As well as some nice steamed Asian veggies.

CILANTRO LIME COCONUT RICE

  • 1 cup (200g) jasmine rice
  • ¾ cup (180ml) coconut milk
  • 1 cup (250ml) water
  • 1 lime [zest]
  • 1 teaspoon lime juice
  • 4 teaspoons fresh cilantro
  • salt
  • pepper

_ rinse rice under cold water until water runs clear
_ combine rice, coconut milk, water and a pinch of salt in a saucepan
_ bring to a simmer
_ partly cover and simmer until liquid is absorbed [about 12-15 minutes]
_ remove from the heat
_ fluff up with a fork
_ stir in lime zest, lime juice and minced cilantro
_ season with salt and pepper
_ serve immediately
