It’s a major problem that I figured out that making truffles is so darn easy :) Now I’m trying all kinds of truffle variations and bring them as gifts for every occasion. Truffles are a nice thing to make with somebody. Rolling and powdering the little balls gets really messy – and therefore lots of fun! If you like to mix it  up a little you can add spices to the cocoa powder you roll the truffles in. A pinch cinnamon, coffee powder or chili powder makes for a nice twist.



  • 0.75 cups heavy cream
  • 2 tablespoons butter
  • 4 teaspoons espresso powder
  • 300g bittersweet chocolate
  • cocoa powder

_ finely chop chocolate [if pieces are too large they won’t melt in time]

_ heat cream, butter and espresso powder

_ remove from heat just before it begins to boil

_ immediately pour over chopped chocolate


_ let sit or a minute

_ whisk by hand until chocolate is smooth and shiny


_ cool to room temperature

_ place in the refrigerator to chill for 30-45 minutes

_ with a teaspoon scoop out balls and place on a baking sheet


_ return to the fridge to firm up a bit

_ by hand form litte round balls and roll balls in cocoa powder

[if you want you can add some espresso powder to the cocoa powder for a stronger coffee taste – I like to add a pinch of cinnamon]

_ keep in the refrigerator until serving
