Every good Schmarrn in Austria comes with apple sauce! Vanilla and some rum give this recipe a little something special.  Apple sauce is a great way to use last years apples you stored in the cellar. My apples were not very sweet, so you might wanna use less sugar if you have sweeter apples. 



  • 500g apples
  • 200ml apple juice
  • 50g sugar
  • 15g butter
  • raisins [optional]
  • 0.5 teaspoons cinnamon
  • lemon juice
  • vanilla
  • pinch salt
  • rum

fox_applesauce3_ peel apples and remove core

_ cut into 1cm thick cubes

_ drizzle with lemon juice

_ slowly caramelize sugar and butter in a pot [not to hot]

_ add apple slices [will sizzle quite loud] 

_ stir until the caramel is liquid again

_ add apple juice, cinnamon, raisins, seeds of one vanilla bean and salt

_ simmer for 15-20 minutes


_ finally add the rum

_ serve hot or cold

_ if you prefer apple sauce pick out the raisins

_ sieve through a sieve with big holes or use an electric blender
