My tip on this one is to wear something black and use only glass bowls when trying this recipe. This syrup is going to stain literally everything! Don’t cook it for too long. You gonna end up with jelly. If so, just pretend it was on purpose and sell it as blueberry thyme jam. 


  • 4 cups blueberries [frozen is ok]
  • 1 lime [juice]
  • 1 bunch thyme
  • 2.5 cups sugar

tox_blue_thyme_syrup2_ wash berries

_ heat and crush berries in a medium saucepan

_ add lemon and thyme tox_blue_thyme_syrup5

_ simmer for 10 min

_ strain through a sieve [try to get as much juice out as possible]

tox_blue_thyme_syrup3_ return juice to pot _add sugar

_ simmer for another 10min

_ cool before bottling

[if you want all seeds etc. out, strain through a paper filter]

_ keep syrup in the fridgetox_blue_thyme_syrup4
