BANANA CHOCOLATE CAKE WITH CAPPUCCINO GANACHE

Super easy cake recipe! Seriously, there is hardly any chance to do anything wrong here. The recipe isn’t very sweet, so pump up the volume on the honey if needed. The important thing here is to use some really ripe bananas. Brown, spotty and mushy is just perfect. Stay away from the green and hard ones!

BANANA CHOCOLATE CAKE WITH CAPPUCCINO GANACHE

  • 2 cups almond flour
  • 0.3 cups unsweetened cacao powder
  • 1 teaspoon baking powder
  • salt
  • 2 eggs
  • 2 bananas
  • 0.3 cups olive oil
  • 0.5 cups honey

_ combine flour, cacao powder, baking powder and salt

_ grease a medium size baking pan with butter and dust with a mixture of flour and cacao powder

_ preheat oven to 180°C

_ mash the bananas with a fork

_ beat eggs in a mixing bowl [for about a minute]

_ add bananas, oil and syrup [beat until well combined]

_ slowly add dry ingredients [beat until everything is mixed]

_ pour batter into the greased form

_ bake for about 45 minutes

_ allow cake to cool completely before adding the ganache

  • 80g dark chocolate
  • 4cl shot hot espresso
  • 4 tablespoons heated milk

_ chop chocolate into small pieces

_ pour hot espresso and heated milk over the chocolate

_ leave for a minute to melt [stir until completely smooth]

_ pour the ganache over the cake

_ serve with fresh fruit and greek yoghurt
