It’s my birthday today :) Or at least it will be when this recipe is posted. It’s one of those scary birthdays where you don’t quite want to admit how old you actually are. So I don’t really mind that I won’t be home for my birthday.
This year I will probably celebrate with Vegemite on toast. Well, let’s hope not. I think you have to grow up with that stuff to actually like it. But you probably already guessed that I will be spending a couple of days in Australia. Business trip! Sounds bad but in this case it’s pretty perfect! I’m going to spend a whole week with a bunch of amazing motorcycle riders exploring the Australian snowy mountains.
Wish me luck that I’m not getting bitten by any funky spiders or snakes!

Oh, yes. Why did I post that recipe. If I were home I would make this cake as my birthday cake. It’s gooey, chocolaty and best of all [if you have to make your birthday cake yourself] done in just a few minutes!



  • 135g butter
  • ½ teaspoon salt
  • 55g (½ cup) cocoa powder
  • 350g (1 ¾ cups) granulated sugar
  • 1 teaspoon vanilla extract
  • 110g (1 cup minus 2 tablespoons) flour
  • 3 large eggs
  • 2 tablespoons icing sugar

_ preheat oven to 180°C [350°F]

_ line a loaf pan with parchment paper

_ melt butter in a small saucepan

_ remove from heat

_ whisk eggs together with salt, cocoa powder, sugar and vanilla


_ mix in melted butter and flour

_ pour mixture into the prepared loaf pan


_ bake for 20 to 30 minutes [should be set around the edges but still gooey in the middle]

_ let the cake cool in the tin for about 20 minutes


_ serve warm dusted with icing sugar
